Til Pitha is a type of pancake filled with Sesame seeds.
It is generally made only on special occasions in Assam.

Ingredients :
Glutinous rice (Bora rice) – 500g
Black sesame seeds – 200 gms
Jaggery (or brown sugar) – 300 gms
Water for soaking

1.Wash and soak the rice overnight .
2.Drain excess water and leave,covered it in a colander for 2 hours to dry.
3.Grind into a fine powder.
4.Transfer to a bowl.Press the rice powder down firmly.
5.Keep covered with a damp cloth.
4.Lightly roast the sesame seeds.Grind to a coarse powder.
5.Grate the jaggery and mix with the sesame seeds

Heat a frying pan in medium flame and take a ladle of rice powder, place it
in the middle of the pan and spread to a size of small pancake with the back of a spoon
(or by tapping with your fingertips)
Place the jaggery and sesame mix in the centre.
Allow the rice to “set” slightly and fold into a cylindrical roll using a palette knife .
Turn over and remove from fire. Make sure the rice does not brown; it should remain white.
Remove from heat and serve with Assam Tea.

    Being staying out of Assam I miss it a lot..!
