ASSAMESE RECIPES
The famous Assamese Fish Tenga
Fish Tenga
Tangy Fish Curry
4-5 pieces of fresh fish
2- 3 table spoon Mustard oil
1/2 tsp fenugreek/methi seeds
1 cup chopped ripe tomatoes
1/2 cup green peas(optional)
salt to taste
1 tsp turmeric powder
1-2 green chili
2-3 tbs chopped coriander leaves for garnish.
Method:
Marinate fish in salt and 1/2 tsp turmeric for 15 minutes.
Heat oil and and half fry fish.Keep aside
In the same pan, splutter seeds .Then add chopped tomatoes.
Cook till water evaporates and tomatoes are cooked and pulpy.
Add peas,1/2 tsp turmeric powder and salt
and two cup hot water .Bring to a boil .
Add fried fish pieces and cover and cook on medium heat until done.
Turn off heat .Add lemon juice(according to taste)and coriander leaves just before serving.
Serve Fish Tenga with Rice.

Dhekia Xaak aru alu
Greens with Potatoes
Ingredients :
2 cups chopped Dhekia Xaak or any green leafy vegetable like,spinach or mustard greens
2 tbsp Bengal gram
2 green chili
2 clove garlic sliced
3 tbsps mustard oil
½ tsp Turmeric powder
Salt to taste
200 grams potatoes cubed
Method:
Wash ,drain and chop the greens.
Wash and soak the Bengal gram for an hour.
Heat mustard oil in a a pan.Add the green chili and sliced garlic.
Add potato cubes followed by the turmeric and salt.
Saute the potatoes and spices.When potatoes are almost cooked
add the bengal gram and the chopped greens and stir upon medium heat till dry and done.
Serve Xaak Bhaji with rice..

@Prianka the Red Savinas were the hottest peppers there on earth until the mighty Bhut Jolokia came along! BJ is nearly twice as hot as Red Savina

these r simply awesome n mouth watering……i think no being an assamese i dnt hav to write dat these r good coz they really r favourite of any assamese. i jst want to tell u one thing dat y dnt u share these assamese recipes in sanjeev kapoor’s website…..coz u know why i’m saying there is each n every recipes of other cultures n regions including bengal……then why not assamese recipes also??? this wil be a kind of recognition and promotion of assamese recipes countrywide……n evry assamese people will love it. its http://www.sanjeevkapoor.com
